About Dark Tea

Dark tea is aged tea that comes exclusively from China’s Hunan province. It is light to fuller-bodied, with an earthy aroma and a lightly sweet, floral, smooth taste. It undergoes a unique process called piling in which the leaves are encouraged to wither and ferment. Probiotic microorganisms mingle with the leaves, changing their aroma, flavor, and appearance. This aging process has been referred to as a state-guarded secret in China.

 

Brewing Dark Tea

To prepare dark tea, rinse with warm water before brewing. Water temperature is 212. Steep to taste; the range of brew time is wide. You may choose several short steeps lasting of a couple of minutes or you may allow the leaves to steep for much longer. This will yield a stronger brew; unlike other teas, dark tea will not get bitter when steeped longer.
