We are excited to host our fifth class on making kombucha at home, scheduled for Saturday, November 14. We’ve had great success with previous classes; many students come back to the shop to report that their new home-brew operations are doing well. Some students even bring their own kombucha samples to share with us.

With that, I’d like to share some things that I really like about our kombucha class:

  • You get two bottles of Starter Solution. Starter Solution is a concentrated, microorganism-rich liquid that holds the energy and power of kombucha. You may have heard of using a SCOBY to make kombucha. A SCOBY is really just a cellular membrane created by the microorganisms as a means to protect their living space. Starting your kombucha with A SCOBY is kind of like starting it with a by-product of the fermentation process. In our experience, using Starter Solution yields a more robust and viable colony-home for your microorganism friends. Plus, our Starter Solution comes from a fine lineage of kombucha-producing organisms that goes back an impressive decade!
  • We discuss how to flavor your kombucha using the secondary fermentation method. Secondary fermentation takes a little more time and work, but overall, it yields a brew that is typically lower in sugar than kombucha you flavor with juice. Part of why I love kombucha is its low sugar content. Flavoring kombucha with fruit juice (as a shocking number of commercial kombucha brewers do) defeats some of the benefits, I think. If this ring trues for you too, it’s important to learn about the secondary flavoring/fermentation step.
  • We want your kombucha brewing adventure to be as successful as possible and are happy to field questions that may arise after you take the class. Our brewer, Bryan, hosts an online discussion group and makes himself available for advice through a variety of means. And, of course, you can always stop by The Snooty Fox to ask questions.
